Well, I’m getting started on my 6th week of 21 day fix. So far, my scale has moved less than I would like BUT I am still pretty happy with my 7 1/2 pound loss. Plus there is lot of movement going on as I gain muscle (thanks to working out every darn day). 21 Day Fix is actually pretty easy to stick to. I never feel starved and you can eat most foods that aren’t processed or full of sugar. Even Dewey has been pretty happy with the food I cook for dinner (all 21 day fix approved!). So I call all this a WIN. Here are the recipes I plan to make this week!
Sunday –Paleo Smoky Grilled Pineapple Burgers (1 red, 1 green, 1 purple (depending on weight of burger))– I’ll eat my burger on lettuce like the recipe but will buy buns for Evan and Dewey. I think the addition of grilled pineapple will be delicious. Plus I can have grilled pineapple leftovers for the rest of the week.
Monday – 21 Day Fix Turkey and Black Bean Chili (1/2 green, 1 red, 1/2 yellow) – We’ve been talking about chili lately. I can’t wait to make this plus it will be PERFECT for leftovers!
Tuesday – Healthy Ranch Chicken (1 Red, 1 Blue, 1 Yellow, 1 1/2 Green) – We all know that I LOVE ranch. I can’t wait to try this recipe. One skillet meals are perfect for weeknight dinners!
Wednesday – Slow Cooker Honey Sriracha Chicken Spring Rolls (1/2 yellow, 1 red and 1 green) I love that this recipe is a bit out of the ordinary. Now that Evan likes things with a bit of spice, I can branch out in what I make for dinner. Eating with our hands is always a hit so I am excited to make these.
Thursday – Pecan Crusted Chicken Tenders (1 yellow, 1 red, 1 blue) – I think I will end up tweaking this recipe a bit but this is a great place to start! I think Evan will love them.
Friday – Steak Fajitas ( 1 Green, 1 Yellow, 1 Red, 1 Teaspoon)- I love, love, love steak fajitas. I must tell you that the 2 corn tortillas for 1 yellow rule in 21 day fix is the BEST. Corn tortillas make everything better!
Saturday – Lemon Garlic Chicken Pasta (1 Yellow, 1/2 Red, 1/4 Green, 2 tsp) – We are a pasta loving family but we’ve been cutting back. But even when you cut back you have to have pasta sometimes, right?
I only included dinner recipes because those are the ones I find the most difficult. I usually eat leftovers if I can fit them in. I only get 2 yellow containers per day so that can make it hard to eat yellow items for lunch as well. But I can change them up a bit to make it work. For example…eating the fajitas on a salad instead of in the tortillas at lunch.
