For many Christians, today is the last day before they start Lent. During Lent, many give up indulgent foods including those with sugar and fat. So eating pancakes for dinner the night before Lent became a tradition.
Even if you don’t do Lent, pancake day is a tradition I can get behind because I LOVE pancakes. Unfortunately, I haven’t figured out any wheat free ones yet so there won’t be any pancakes on my plate tonight. However, if you are planning on a pancake feast tonight or anytime, I have brought my favorite pancake recipes all together in one place to make it easy peasy for you to find them (click on the recipe titles to open the recipe). Blueberry Pancakes – Delicious blueberries coupled with the slight crunch of added corn meal. This is my favourite blueberry pancake recipe in the world!
Fluffy Pancakes – This is my families go to pancake recipe. The pancakes are fluffy and light. Perfect with a big pat of butter and maple syrup!
Cinnamon Oat Pancakes – Cinnamon and the wholesomeness of oats combine to make these pancakes reminiscent of a bowl of oatmeal. Deliciously filling, they are perfect for a cold winter day.
German Apple Pancake (Dutch Baby) – I wouldn’t call this a true pancake but I love it. It is more custardy than pancakey but it is perfect for a crowd. Don’t like apples? You could easily substitute other fruits to make this recipe yours.
Easy Apple Crepes – For years I was scared to make crepes (do you have a recipe that scares you too much to try?). Thankfully I got over the fear and tried making crepes. Who knew they were pretty simple. Practice on the first few and you’ll have it down in no time. I’ve included a recipe for an easy apple filling though you can fill crepes with ANYTHING. Evan’s favorite filling is nutella with a side of whipped cream!

I must admit....my favorite syrup is Aunt Jemima Lite. I know, I know, they are going to revoke my foodie card. I just can't do maple syrup. It's too thin.
