I published this recipe quite a few years ago as a Christmas cookie idea. Since then I have realized that I was selling this delectable no-bake cookie short. You see, No Bake Peanut Butter Cornflake Cookies are good any time of the year not just at Christmas. Some people also call them peanut butter cornflake candy. Whatever you call them, I call them delicious!
In fact, I think these are BEST made when it is hot and steamy outside and you are craving cookies but turning on the oven in your non-air conditioned house seems like the worst idea in the world. Yep, summer in Alberta wants, no NEEDS, these cookies.
Plus, the delicious combo of sweet and salty with the crunch of cornflakes will please the most discerning of cookie connoisseur. And you only need a big pot, a few measuring cups and a spoon. Oh and speaking of measuring cups…get one of these adjustable measuring cups for measuring peanut butter and other sticky, hard to measure things. You adjust to how much you need, add the stuff and then push it out using the bottom of the cup. So much easier!
I prefer to make these with Adam’s Natural Salted peanut butter. No, this is not a sponsored post, Adam’s is just my all-time favorite peanut butter because it tastes like peanuts. You won’t find any hydrogenated oils or sugar in it either. Just peanuts and salt (because I think unsalted peanut butter tastes disgusting…sorry it does). A Tip for Using Natural Peanut Butter
Oh and don’t let the oil on the top of the natural peanut butter scare you either. When you get home, dump the whole jar in a bowl, stir it well and then put it back in the jar. Store in the refrigerator to keep it from separating again. Don’t try to stir it in the jar. You will end up cursing and cleaning up peanut oil off your countertops. It seems like it would save time and effort but it does not.
After you’ve made your Peanut Butter Cornflake Cookies and they’ve cooled, layer them in a container with wax paper between the layers. If you don’t, you may end up with one giant cornflake cookie clump. It will still taste amazing but may be less aesthetically pleasing.

No Bake Peanut Butter Cornflake Cookies
Ingredients
- 1 cup corn syrup
- 3/4 cup granulated sugar
- 1 cup peanut butter, crunchy or smooth both work
- 5 cups of corn flakes, use more or less to get the consistency you want
- waxed paper
Instructions
Measure out your peanut butter and cornflakes before you get started. This recipe goes pretty fast and you won’t have time to stop and measure once you are heating your sugar and syrup.
Combine corn syrup and sugar in a large saucepan over medium-high heat until the sugar dissolves (but don’t bring it to a boil).
Remove from heat and add peanut butter.
Stir until smooth.
Add corn flakes. More cornflakes gives you a crispier treat while less gives you a chewier treat. (I make mine chewier.)
Drop using two spoons onto wax paper and let cool.
Makes approximately 2 dozen.

My mom has been making these since I was a child so I’m not really sure where the recipe came from. I love getting reminded of those childhood treats that are easy and delicious!

My grandma made these, then my mom, then me and now my daughter. They are 4 generations old and loved by everyone in my family. I use a cup of sugar also in my recipe. I have also used corn chex instead of corn flakes. A different taste but just as great!!! I use a heaping cup of peanut butter and 6 cups of cornflakes. Have never had any left overs!!! Lol

Our family loves these and they're always a hit when I take them to share with others. This is one of the first things I learned to make when I was a kid! I've been making them about 55 years and they "never go out of style"!
