Blueberry Cobbler Recipe

I love experimenting and trying out new foods, but there is nothing like classic comfort food. Blueberry cobbler is just that. Memories of my grandmother’s kitchen come flooding back to me every time I bake a cobbler. If you’ve been here long, this shouldn’t surprise you since Peach Cobbler is one of my most popular recipes!

If you’re not an expert baker, have no fear. This is a really simple recipe that comes together quickly. Lemon juice adds just the right hint of tartness to the thick, sweet, syrupy blueberry mixture. Combined with the pastry, this dessert is the perfect way to top off a meal.

Blueberry Cobbler

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1 ½ cups granulated sugar, divided
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup milk
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter, melted

Instructions:

Preheat oven to 350 degrees.

Add blueberries, lemon juice and half a cup of sugar to a sauce pan and heat to a boil.

Melt ½ cup butter in an 8×8 baking pan. You can either melt the butter directly in the pan in the oven, or melt it in the microwave and then add it to the pan.

Mix one cup of sugar, flour, baking powder, salt, eggs, milk, and cinnamon together in a small bowl. Pour over the melted butter in the baking pan, but do not stir to incorporate.

Pour blueberries with sauce from the saucepan over the top of the batter in the baking pan. Again, do not stir together.

Bake in 350 degree oven for 40-45 minutes.

Blueberry Cobbler

Serve as is (delicious!) or with ice cream or whipped cream for that final touch. Your friends and family are going to love this Southern classic blueberry dessert recipe!
