Saskatoon Berry or Blueberry Muffins

Evan and I visit our local Saskatoon berry U-pick every summer. We have figured out that Saskatoon berries are one of our favorite berries to eat in the summer. Delicious!
 
 
Saskatoons are a sweet, seedy berry. They look a lot like blueberries but have a different taste…some say more like a cherry. They grow on the prairies of Canada and in the Northern US. In the US they are called service berries.

We have been eating them by the handful for a couple of days. With company coming this weekend, I will be whipping up a batch of Saskatoon Berry muffins.
 
 
A pail of berries goes a loooooong way. I asked what I should make on my MerryAboutTown FB page and there were some great suggestions like Saskatoon berry barbecue sauce, panna cotta, smoothies and more. These will be a great addition to my favourite Saskatoon berry pie recipe and I am looking at revamping some of my blueberry recipes. I think you could easily use Saskatoon berries instead of blueberries in my blueberry overnight french toast bake.

What Ingredients Do I Need to Make These Muffins?

The best part about these muffins is that they only require eight simple ingredients to make. They are:

  • All-purpose flour
  • Baking Powder
  • Salt
  • Butter
  • Granulated sugar
  • Eggs
  • Milk
  • Blueberries

How to Make Saskatoon Berry or Blueberry Muffins

Here’s the recipe to my delicious Saskatoon Berry / Blueberry Muffins:

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 3/4 cup milk
  • 1 1/2 cup saskatoons or blueberries

Instructions

Preheat oven to 375°F.

In bowl, combine flour, baking powder & salt.

In a separate bowl, cream the butter & the sugar.

Add eggs one at a time, mixing after each addition.

Slowly stir in milk (mixture may look curdled).

Pour liquid mixture into dry ingredients.

Stir just until moistened. Fold in blueberries.

Bake for 25 to 30 minutes in a greased muffin pan or use paper muffin cups.

Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

Fresh berries are in season so make these easy and delectable Saskatoon berry or blueberry muffins. It's a great way to use fresh berries!
