This isn’t really a recipe per se…..it’s more of a new breakfast idea. We eat breakfast tacos quite a bit. It is very kid friendly and the whole family loves them.

Breakfast Tacos

Crunchy and delicious breakfast tacos!
Ingredients
- 4-6 corn tortillas
- 7 eggs
- 1 link chorizo, removed from casing
- 1/2 cup shredded cheese
- salsa, to taste
Instructions
- Scramble the eggs as normal. As you are cooking them, add the pieces of cooked bacon. Heat up the flour tortillas in the microwave for ~10 seconds or until warm. Add egg/bacon mixture to the tortilla, sprinkle with cheese and add salsa. You can fry the taco in a pan briefly to crisp up the outside of the taco & make it extra yummy.
- Brown chorizo in a small skillet
- Cook corn tortillas in a small skillet with a small amount of butter until they are pliable.
- Add eggs, chorizo and cheese. Fold over tortilla and cook in pan until crisp. Serve hot with salsa.

Recipe Notes: This is ultimately flexible. You can use sausage, veggies, etc. You can also use flour tortillas. I like my breakfast taco hot so I add Sriracha Rooster sauce. Yum!

Hey Merry:) I'm hungry now so I'll say that your breakfast taco looks more delicious than your new shoes. Normally I would find the shoes more appealing, and I SO would have bought them too. Oh, no. I wrote a long comment and accidentally hit some random key on the keyboard and lost it. :( I'll be more careful this time.
Anyway, what I said was that your breakfast tacos look great. I love that sort of thing, BUT I'm on a diet now and won't let myself eat some of your ingredients. It's been 21 months since our baby girl was born and I still haven't lost my sympathetic baby bump. ;)
So for example this morning I sauteed (in a few drops of olive oil) some peppers (red, green & yellow), onions and wilted some spinach... before pouring in some of that 99% egg white cartoned egg product. Makes a tasty omelet.
While I'm eating plenty of carbs, I'm not eating grains or dairy... more of a veggie, fruit and lean meat (and egg) sort of diet. I'll probably loose the weight just in time for the next pregnancy. :)

p.s. Per your comments on kids TV programming... Being down here in the U.S. I don't think we have access to the same BBC programs that you might in Canada. BBC America has a select set of UK programming, but shows like In The Night Garden and Waybaloo aren't among them.
Does Canada have access to the BBC channels proper, Merry? Back here in the States we have to wait for even the programs we do have access to (e.g. Doctor Who) for several weeks after it first airs in the UK. On the worse/weirder front check out my blog on "What Scared You as a Child?" The CGI program I mention (and picture) at the start of that blog is about as weird a kids program as I'd care to see.
