Over the years, I have had it relatively easy when it comes to dinner. You see, Evan ate NOTHING so it didn’t really matter what I made. He was an equal opportunity food hater. These days, though, he’s developed quite the appetite. When we used to have to force him to finish half of his food, he now asks for seconds. While this is great…it also means that I have to up my dinner game. Baked chicken is always a hit with him but sometimes the rest of us get a bit bored. Buffalo Ranch Baked Chicken

4 chicken legs, cleaned and patted dry
4 chicken thighs, cleaned and patted dry
1 Tbsp garlic powder
2 tsp onion powder
seasoning salt and pepper (can also use regular salt) as desired
1 Tbsp hot sauce (something like Franks red hot)
3 Tbsp ranch dressing
Directions:
1. Preheat oven to 350
2. Season the chicken pieces with all the powdered seasonings, salt and pepper.
3. Bake in the oven for 35 – 40 minutes or until completely cooked through.
4. Remove from the oven and let sit for 5 minutes
5. Meanwhile, in a bowl, mix together the hot sauce and the ranch dressing
6. Drizzle the dressing over the chicken and put the remaining dip into small bowls for further dipping if desired.
