Butter Pecan Peach Crumble Minis

Picking a favourite summer fruit would be just about impossible to me. However, peaches would definitely be in the list of my favourites. There is something about their peachy goodness that just screams summer to me. You know I love Southern Peach Cobbler and make it all the time but sometimes I want to switch it up. You’ve got to try these sweet and easy Butter Pecan Peach Crumble Minis.

Growing up in the South meant eating a LOT of peaches. In fact, we went through Clanton, Alabama on our recent RV roadtrip and they are known for their peaches. They even have a peach shaped water tower! Unfortunately, fresh peaches are only available for a small part of the year.

Thankfully, canned peaches can be used in this recipe just as well as fresh. Plus the recipe uses a boxed cake mix to make it super easy and perfect for those lazy summer days. Grab the ingredients for your pantry and you are ready to make it at a moment’s notice.

Butter Pecan Peach Crumble Minis

Ingredients:

Butter Pecan Cake Mix
1/3 cup quick oats
1 c Butter, cold
Sliced peaches in light syrup, drained (or 4 – 5 fresh, diced)
1 tbsp Cinnamon
Pecans , whole or bits

Preheat oven to 350. In a large bowl, mix the cake mix and quick oats. Add the butter, and with a pastry cutter or  your fingers,  cut the butter into the cake mix so that it resembles small peas.

Grease 6-8 4-inch ramekinsCut the peach slices into small chunks, roughly the size of marbles. Divide the peaches evenly between the ramekin dishes. Sprinkle with the cinnamon.

Peach Crumb FillingDivide the pecan topping and sprinkle on top of the peaches. Bake for approximately 25 – 30 minutes, or until the topping is golden brown. Remove from oven and let cool slightly.

Ingredients

  • 1 box Butter Pecan Cake Mix

My husband loves peaches, thank you for this easy and delicious recipe. Even as someone who isn't crazy about peaches herself, I can get behind anything butter pecan ;) Yum!
