Have you ever heard of party potatoes? How about funeral potatoes? Hashbrown casserole? They are all terms that are often used interchangeably for shredded or hashbrown potatoes that are creamy and cheesy with a bread crumb topping. Cheesy party potatoes made in the Instant Pot are a delicious side dish for breakfast, brunch or anytime you want a cheesy and delicious side dish.
Are you wondering why a casserole would be called “funeral potatoes”? Well, party potatoes or funeral potatoes are the ultimate comfort food. So they were a popular casserole to take to funerals or parties. Who knew?!?
Many recipes for party potatoes call for canned soup. This recipe uses sour cream instead so you get all the flavour without canned soups.
Cheesy Party Potatoes in the Instant Pot
Ingredients
2 Tbsp unsalted butter
¾ cup red onion, chopped
3 – 4 garlic cloves, minced
1 cup broth (vegetable or chicken)
½ teaspoon salt
¼ teaspoon pepper
8 cups shredded potatoes (to keep the potatoes fresh while shredding, let sit in water with a couple of teaspoons of citric acid while waiting to shred, and then again after shredding)
2 cups shredded cheddar cheese
1 cup sour cream
½ cup breadcrumbs
Instructions
Turn Instant Pot on to saute mode and saute the onions and garlic together with butter for 1 – 2 minutes while stirring.
Add in the broth and seasonings.
Add shredded potatoes to an Instant Pot steamer basket and set this on top of the onions and broth. The will prevent sticking to the pot. Check out my 12 Must-Have Accessories for The Instant Pot post.
Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 1 minute.
Allow for a quick pressure release and then add in the sour cream and cheese and dump the potatoes into the mixture. Stir it all together.
Transfer to a small baking dish (8-inch square or similar) and top with bread crumbs.
Turn on oven broiler on low. Broil on a low oven rack for 2 – 3 minutes. Remove from oven and serve.

- Turn the pressure valve to venting for a quick pressure release. Add in the sour cream and cheese and dump the potatoes into the mixture. Stir it all together.
- Transfer the potato mixture to a small baking dish (8-inch square or similar) and top with bread crumbs.
- Turn on oven broiler on low. Broil 2-3 minutes watching closely so it doesn't burn.
- Remove from oven and serve.

You had me at cheesy potatoes!!! I am so excited to try this recipe! I will have to swap out the breadcrumbs for a gluten-free version, but other than that, it's a go for this tasty dish!!
