Cheesy Pesto Chicken Sliders Recipe

Cheesy Pesto Chicken Sliders Recipe

I love sliders, don’t you? What is a slider anyway? Wikipedia says the word slider primarily refers to small hamburgers but is sometimes used to describe any small sandwich made with a slider roll. We love my Bacon Cheeseburger Sliders Recipe but sometimes we want a non-burger option too. Enter my Pesto Chicken Sliders Recipe!

I am a HUGE fan of pesto. It takes any sandwich or slider to the next level. Pesto is easy to make at home but the jarred pesto at Costco is amazing too (in case you are lazy like me).

Pesto Chicken Sliders Recipe

Ingredients:

  • 1 package of Hawaiian or tray dinner rolls
  • 2 cups chopped rotisserie chicken or shredded chicken
  • 3 ounces prepared pesto
  • 6 slices Mozzarella or Havarti cheese
  • 3 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • ½ teaspoon dried basil

Instructions:

Dinner rolls in a glass dish for sliders

Preheat oven to 350 degrees. Cut a tray of Hawaiian rolls or dinner rolls in half horizontally. Spray a glass dish and put the bottom half of the rolls in.

Spreading pesto on slider buns

Spread the pesto out over the bottom half of the rolls.

Add chopped chicken to pesto slider buns

Add chopped chicken on top of the pesto. You can use a rotisserie chicken or my Instant Pot Shredded Chicken.

Cover chicken and pesto with cheese

Add sliced mozzarella or Havarti cheese.

Pour herbed butter over sliders before baking

Place the top of the rolls on top. Melt the butter and mix in garlic powder and dried basil. Pour this over the top of the rolls and brush it over the rolls to spread out evenly. Cover with foil and bake for 10 minutes. Remove the foil and bake for an additional 10-12 minutes.
