Nothing says summer like chicken salad! It is my favourite sandwich filler by a MILE. Make it chicken salad with grapes and Asian pears and I am your friend for LIFE. Creamy, chicken-y with those sweet bursts of fruit. YUM!
Whip up this recipe and you can have chicken salad sandwiches, chicken salad croissants, chicken salad lettuce cups or just a scoop with crackers. However you serve this chicken salad with grapes and pears, you will be happy, I promise.
Plus, this recipe is perfect for eating at home with your family or to serve to guests. Oh, and it is dead easy. Even better, right?
And now my mouth is watering and I want chicken salad sandwiches for supper. This always happens!
Chicken Salad with Grapes and Asian Pears

Ingredients:
2 cups chicken, cooked and cubed (use Instant Pot chicken)
1 Asian pear, large (can use apple for a substitution) (drizzle with lemon juice to prevent browning if you wish)
1 cup grapes, halved across the width
1 stalk celery, diced fine
1 tbs red onion, diced fine
½ cup pecan pieces
Dressing
3/4 cup yogurt
¼ cup mayonnaise
½ cup orange juice
zest of 1 orange
as desired, salt and pepper
Directions:
First, you need cooked chicken. I often buy a rotisserie chicken for this or make chicken breasts in the Instant Pot.
Add your other salad ingredients (not the dressing ingredients) and combine.
In another small bowl, combine the ingredients for the dressing. The orange juice should be added in small increments until you’ve reach the consistency that you prefer.
Note: I did not add any sugar to the dressing, but if the orange that you use is slightly more tart, then you may want to add a bit of sugar. )
Mix the dressing into the chicken mixture. Serve on lettuce leaves or on bread slices immediately, or keep covered in the refrigerator, chilled, for an hour or so.

I love this lightened up chicken salad recipe - the pecans and grapes really make it different from plain old chicken salad!
