We eat a LOT of pancakes around our house. The kids love them but I must admit I get a bit tired of them. This weekend I decided to change it up a bit. I found this recipe from Canadian Living online and thought I’d give it a whirl.
Cinnamon Oat Pancakes
Cinnamon oat pancakes are perfect for breakfast or brunch.
Ingredients
- 1 1/3 cups all purpose flour
- 1/4 cup packed brown sugar
- 1 Tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup quick cook oats
- 1 egg
- 1 1/2 cup milk
- 3 Tbsp canola oil
Instructions
- In a medium bowl, mix all the dry ingredients. In a small bowl, whisk together wet ingredients. Pour wet ingredients into dry ingredients and combine until almost smoothly mixed.
- Preheat non-stick pan on medium to medium-high heat. Pour large spoonful of batter on pan. Turn pancake when edges look dry and their are bubbles on surface of pancake.

Recipe Notes: These were a big hit. I found that the batter was quite thick so I spread it out when I put it in the pan to fry. This kept the pancakes from being super, super thick. They still rose quite a bit so I think it worked out great.
