Life never seems to get LESS busy so I have been trying to do what I can to make my life easier. I use my CrockPot and Instant Pot LOTS because they both help me make delicious dinners without tons of time and effort. Beef Stew is one of my favourite stews but sometimes it is a little…well…boring.

Crockpot Coconut Curry Beef Stew Recipe
Ingredients:
1 lb Beef, chuck, cut into bitesize chunks
2 carrots, chopped
2 potatoes, chopped
1 onion, large, diced
1 Tbsp curry powder
2 tsp ginger powder
1 tsp garlic, minced
14 oz coconut milk
1-2 Tbsp brown sugar
as desired salt and pepper
Instructions:
Season the beef with salt and pepper. Fry over a med-high heat until seared on all sides. Remove and set aside.
Prep our vegetables and set aside. Make sure to keep chunks relatively similar in size so they cook at the same rate.
In the same fry pan, add oil, curry, garlic and the ginger. Sauté these spices for about a minute or so.
Add the coconut milk and brown sugar. Begin with 1 tablespoon and after it dissolved, taste. If you want it a tad sweeter, then add the second tablespoon.
Add the beef , the coconut sauce and the veggies to the slow cooker. Cook on low for 8 – 10 hours. At the 8 hour mark, check for the consistency of the beef. Cook until the level of tenderness you desire. Serve over rice. Enjoy!
