Cranberry Orange Loaf
2 cups all purpose flour (I used 1 c white flour & 1 cup whole wheat flour)
1 cup fresh or frozen cranberries, coarsely chopped
3/4 cup granulated sugar
1/2 cup walnuts, coarsely chopped (I omitted these)
2 1/2 tsp baking powder
1/4 tsp salt
1 egg, slightly beaten
1 tsp grated orange peel (I omitted this)
2/3 cup orange juice
1/2 cup Hellman’s Real Mayonaise (I used 1/2 the Fat kind)
Grease an 3X4 inch (1.5L) loaf pan. Preheat oven to 350°F. In large bowl, combine flour, cranberries, sugar, walnuts, baking powder & salt. In small bowl, beat egg, orange peel, orange juice & mayo until smooth. Stir into flour mixture just until moistened (batter will be stiff). Spoon into pan.
Bake in preheated oven 60 to 70 minutes. Loaf is done whne toothpick inserted in centre comes out clean. Cool on rack 10 minutes. Remove from pan; cool completely on rack. Makes 1 loaf – 12 servings.
I rate this recipe 4/5. If I made it again I would try to have the grated orange peel for a more orange-y taste. I would also proably use the full fat mayo for a better taste. Though it tastes pretty darn good the way I made it and it’s a bit more healthy than the normal recipe.
