Creamy Pecan Chocolate Chip Bars

Bar cookies are one of my favourite treats to make because you stir them together, bake and 16 bars are ready to go. Regular cookies are yummy but they take a long time to get done making batch after batch. Instead, make these Creamy Pecan Chocolate Chip Bars. They’re perfect for your Christmas cookie tray or any time you want a delicious treat.

Make a few batches of these, a double batch of Homemade Nuts and Bolts and some No Bake Peanut Butter Cornflake Cookies and you could be done with your homemade gifts for Christmas!

Creamy Pecan Chocolate Chip Bars Recipe

Ingredients

  • 2 cups flour
  • 2/3 cup packed brown sugar
  • ¾ cups butter, softened
  • 8-ounce package cream cheese
  • 1/3 cup brown sugar
  • ½ teaspoon vanilla
  • 2 tablespoons flour
  • 2 eggs
  • 1 cup chocolate chips
  • 1 cup chopped pecans

Instructions

Making crust of Creamy Pecan Chocolate Chip Bars

Preheat oven to 350 degrees. Mix together flour, brown sugar and softened butter until crumbly.

Press crust into pan

Press crumb mixture into a 13×9 baking pan lined with aluminium foil. Bake for 20 minutes or until light golden brown.

In a small bowl beat the cream cheese. Mix in brown sugar, vanilla,  2 tablespoons flour and eggs. Pour over the baked crust.

Sprinkle pecans and chocolate chips

Sprinkle chocolate chips and chopped pecans over the cream cheese mixture. Bake for 15-20 minutes.

Cut into bars

Cool completely and remove from pan by pulling up on the aluminium foil. Peel back foil and cut into 16 bars.
