While pumpkin may feel like a “fall only” kind of thing….it’s not! Pumpkin is full of nutrients and canned pumpkin lasts forever in the pantry. This will become your go-to recipe when you aren’t sure what to make and need to cook out of the pantry. No one will know, though, because it’s just that good.

While this pasta tastes creamy, the pumpkin pasta sauce has no cream in it. Instead we used almond milk to give it a bit of creaminess. Don’t have almond milk? Replace it with regular milk or cream if you like. This will change the nutritional information a bit but it should work out just fine.

How to Store Leftover Pumpkin Pasta

Got leftovers? No problem! Our Pumpkin Pasta Dish is really easy to store.

When storing leftovers, be sure that the pasta is completely cool to the touch. Pour the cooled-down pasta into an airtight container and refrigerate for up to five days.

Can I Freeze This Creamy Pumpkin Pasta Dish?

Yes! This pasta dish can be placed in the freezer. Be sure to place it in a freezer-friendly, container or a freezer bag. You will be able to freeze it for up to three months.

To reheat frozen leftover pumpkin pasta, thaw out in a casserole dish. Add some milk and re-heat in a 350 degree oven for about 10-15 minutes.

What is Pumpkin Pasta Sauce Made Of?

These are the ingredients to make my rendition of pumpkin pasta sauce:

  • Garlic
  • Butter
  • Canned Pumpkin puree (NOT pumpkin pie filling)
  • Water
  • Almond milk
  • Ground nutmeg
  • Ground pepper
  • Salt

We used penne for this particular dish, and topped it off with some sauteed brown mushrooms.

How to Make Creamy Pumpkin Pasta Blog Post

Step 1: Boil Your Pasta

Begin by boiling your pasta al dente (just follow the package’s directions). Don’t forget to salt your water!

Step 2: Start the Sauce

As your pasta is boiling, add minced garlic and 1 Tablespoon butter to a medium sauce pan over medium heat. Once the pasta is done, drain and put aside and continue working on your sauce. In a hurry? Use a garlic press instead of mincing.

Step 3: Add the Pumpkin Puree

Add pumpkin puree and water. Mix until well-incorporated.

Step 4: Add the Almond Milk

Add almond milk and mix some more.

Step 5: Season the Sauce

Season with nutmeg, pepper and salt. Mix and then allow to come to a soft boil.

Step 6: Prepare the Brown Mushrooms

Add remaining butter to a medium skillet over medium heat. Add sliced mushrooms and cook for about 5-7 minutes.

Mix together pasta and sauce. Top off with cooked brown mushrooms. Serve and enjoy!

  • 8 oz. pasta
  • 3 cloves garlic, minced
  • 2 tbsp butter, divided
  • 1 cup pumpkin puree
  • 1 cup water
  • 3 tbsp almond milk (or any milk of your choice)
  • ¼ tsp ground nutmeg
  • Fresh ground pepper, to taste
  • 1 tsp salt
  • 1 cup sliced brown mushrooms
