Mid-September is here and I’m watching the rain turn to snow and back outside my living room window. September may not feel like Fall for some places but here in Alberta it does. So I’m over here in full on apple, pumpkin and scarves frame of mind. In that vein, here is a delicious recipe for Creamy Pumpkin Pie from Scratch.
Yes, I realize it is easier to just buy a huge pumpkin pie from Costco, but making it yourself is easy peasy! Let me walk you through it!
Creamy Pumpkin Pie From Scratch
1 (8 ounce) package cream cheese
14 ounces sweetened condensed milk
2 cups pumpkin puree canned or from scratch
1 teaspoon pumpkin pie spice
1 recipe pastry for a 9 inch single crust pie or your favourite frozen deep dish pie crust
Note: Make sure to use Pumpkin Puree NOT Pumpkin Pie filling. If you use the wrong one, it will be super duper sweet and not what you are looking for!
Preheat oven to 350 degrees F (175 degrees C).
Mix cream cheese and condensed milk until smooth.
Stir in the pureed pumpkin,pumpkin pie spice, and eggs. (Only 5 ingredients in the filling! See, I told you it was easy!)
Mix until well combined. Isn’t it gorgeous? Pour batter into the pie shell.
Bake at 350 degrees F (175 degrees C) for 45 minutes or until a knife inserted 1 inch from the edge comes out clean. Serve warm with fresh whipped cream!
Only 5 ingredients in the filling and you can use scratch pie crust or frozen. I mean, how much easier could it get? Chances are you have all the ingredients you need to make it in your pantry and fridge right now. Pumpkin pie at the drop of a hat. Yum!
