Creole Instant Pot Black Beans

Beans served with rice are a southern classic. They take me right back to my childhood and dishes served for simple, inexpensive, and delicious family meals. This Creole Instant Pot Black Beans recipe spices things up a bit and takes this delicious dish to the next level.

Hearty enough to serve as the main course, Creole black beans and rice is a great side dish for chicken or baked ham. They’re also a great addition to a potluck, adding a little zing to the typical fare.

Creole Instant Pot Black Beans

Ingredients:

  • 14 ounce smoked turkey sausage, cut into ½ to 1-inch pieces
  • 2 cups dried black beans, rinsed and sorted
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced or pressed
  • 3 teaspoons dried oregano
  • 1 ½ teaspoons white pepper
  • ¼ teaspoons black pepper
  • ¼ teaspoon cayenne pepper
  • 4 bay leaves
  • 1 8-ounce can tomato sauce
  • 4 cups chicken stock
  • Cooked rice, to serve

Instructions:

Turn Instant Pot onto saute mode and add in the sausage and vegetables. Saute for about 5 minutes or vegetables start to soften.

Add in remaining ingredients (seasonings, beans and chicken stock), and mix everything together.

Close the lid on the Instant Pot and turn the pressure valve to sealing. Press the manual button and use the +/- buttons to set the timer for 35 minutes. Once the IP counts down, leave the pressure valve on sealing until 25 minutes has elapsed (natural pressure release). After 25 minutes, turn the valve to venting to release any remaining pressure before opening the lid.

Serve with rice.
