Cucumber Tomato Slaw Recipe

Some of my favorite flavors of summer are fresh cucumbers and tomatoes.  Growing up, we would pick them and eat them while we were still in the garden!  I love to add them to fresh veggie trays and salads but I also love to make them the star of the dish, like in this Cucumber Tomato Slaw Recipe.  My husband absolutely loves a good coleslaw and I’m always trying new and unique recipes for him.  This summer I decided to get a little extra creative and cut out the cabbage when I created this take on slaw.

This Cucumber Tomato Slaw starts with those adorable little baby cucumbers that are loaded with minerals and vitamins.  I love these because the are full of flavor, they are “seedless”, the skins taste great so they don’t have to be peeled, and they are full of flavor.  Yes, I know I said that twice.  It’s worth repeating!  There are also celery pieces, red onion slices, and grape tomatoes in this amazing slaw.

I sliced the cucumbers into thin slices, the celery into coarse pieces, the onion into thin slices, and the grape tomatoes in half.  I used 5 of the baby cucumbers, 1 package of grape tomatoes, a half of a small red onion, and a couple of stalks of celery.  I prefer those from the heart of the celery best.

Cucumber Tomato Slaw

For the dressing you’ll mix together about 3/4 of a cup of Mayonnaise, 2 Tbsp of your favorite Ranch Dressing, 1 tsp of lemon juice, 1 Tbsp of apple cider vinegar, salt, pepper, garlic powder, onion powder, and dill.  All the seasonings should be to taste.  Everyone is different and I know here we like ours with a little more garlic and pepper than some!  Stir all the dressing ingredients together and pour over the veggies.  Toss until the veggies are coated well.

Chill until ready to serve!  This Cucumber Tomato Slaw is sure to be a great addition to this summer’s cookouts!

Ingredients

  • 5 Baby Cucumbers
  • 1 Pint Grape Tomatoes
  • 1/2 Red Onion
  • 2 Stalks Celery Heart
  • 3/4 Cup Mayonnaise
  • 2 Tbsp Ranch Dressing
  • 1 tsp Lemon Juice
  • 1 Tbsp Apple Cider Vinegar
  • Salt, Pepper, Garlic Powder, Onion Powder, and Dill to Taste

Instructions

  1. Cut cucumbers into slices.
  2. Coarse cut celery stalks.
  3. Cut tomatoes in half.
  4. Slice onion into thin slices.
  5. Mix veggies together and set aside.
  6. Mix dressing ingredients together.
  7. Pour dressing over veggies, stir to coat well.
