Delicious Double Chocolate Muffins

Muffins in our house usually mean banana muffins or blueberry muffins. Both are delicious but sometimes you want a bit more of a treat. With chocolate cake and chocolate chips, these double chocolate muffins definitely count as a treat!

Another great thing about this recipe is that it is a great one to make with your kids. Evan loved baking with me when he was younger and now, at almost 13, he bakes all by himself.

Double Chocolate Muffins

Ingredients:

  • 1 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 3 Tbsp baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 cups semisweet chocolate chips

Directions:

Preheat oven to 350 degrees. Prepare 18 muffin cups by spraying with cooking spray or using paper liners.

Mix Dry ingredients

Combine dry ingredients in a large bowl.

Add liquids

Add wet ingredients and stir until just mixed.

Add Chocolate chips

Fold in chocolate chips reserving a few to sprinkle over the top of the muffins.

Fill muffin cups

Bake for 20 to 25 minutes.

Cool on a baking rack.
