Growing up, I absolutely adored Dr. Seuss’ work. There was just something about the rhythmic rhymes and colorful illustrations that brought me tons of joy. I love passing on this joy to my kids. These fun Dr. Seuss Rice Krispies Treats capture the colourful fun of the book 1 Fish, 2 Fish.

Of course, as a parent, it didn’t change. When my son was younger, he couldn’t get enough of Dr. Seuss! We would read through all the books, and it would always bring back great memories for me.
For our family, 1 Fish, 2 Fish is our all-time favorite! I thought it would be fantastic to whip-up a dessert dedicated to the quirky story. Ladies and gents: I am incredibly proud to present my 1 Fish, 2 Fish Dr. Seuss Rice Krispies Treats.
1 Fish, 2 Fish Dr. Seuss Rice Krispies Treats
Ingredients
- White candy balls (Sprinkles) or mermaid mix (sprinkles)
- Store-bought rice Krispies treats (or homemade)
- 1 bag melted blue candy coating
- Goldfish snacks
Equipment
- Small mixing bowl
- Paper straws or sucker sticks
- Blue candy melts
- Parchment-lined baking sheet
Instructions
Melt the blue candy according to the package’s instructions and pour into a small mixing bowl.
To start assembly, dip the tip of a paper straw into the melted blue candy. Secure one cereal treat onto the straw.
Dip the treat into the chocolate, covering the front and top of the rice cereal treat.
Immediately add Goldfish crackers and sprinkles onto the coated rice cereal treat (work quickly before the melted candy sets).
Gently place on lined baking sheet and allow to set for 20-25 minutes before serving.
Notes
It is very important that you line the baking sheet with parchment paper so that the rice cereal treats do not stick to the bottom of the pan.
Because the treats are laid out flat on parchment paper, I would not recommend dipping the treat entirely into the melted candy (ie.: covering both the front and back). If you do, you risk leaving a thick coat of chocolate sticking out from the sides.
