Easy Freezer Breakfast Burritos

Running to get to work and get Evan to school means that Dewey and I rarely get fed. We all know that breakfast is important so how can we make that different? We’ve started making these easy and delicious freezer breakfast burritos.

Dewey and I met in Austin, TX. I miss Austin a lot. One of the things I miss about it the most is the food. Breakfast tacos and breakfast burritos were an everyday occurrence. Let me tell you…that is a good thing. Now, we are lucky to eat breakfast.

This week, my plan is to make Breakfast Burritos for the freezer. So what is a Breakfast Burrito? Well, in it’s simplest form it is a tortilla and eggs. Where it goes from there is up to you and only limited by your imagination. Today I decided to make some simple breakfast burritos using Burnbrae Farms Egg Creations in Veggies & Feta. You can make 7-8 breakfast burritos for the freezer in about 10 minutes.

First, gather your ingredients….you’ll need 10 whole eggs or a carton of Burnbrae Farms Egg Creations . I recommend either the Veggies & Feta or the Mushroom & Spinach if you use the carton. That way if you don’t have any add-ins lying around, you won’t care.

Breakfast Burritos

Next, shake your Egg Creations. Like…. REALLY…shake it. You want to make some nice fluffy scrambled eggs. If you are using whole eggs, whisk them well incorporating lots of air.

Cook them until they are nice and fluffy. I like to cook them pretty dry. No one likes a soggy breakfast burrito!

Next, microwave your flour tortillas for a bit until they are soft and pliable. Start at 10 seconds and keep going a few seconds at a time from there. You don’t want to burn them!

Then put a spoonful of your scrambled eggs on each tortilla. Sprinkle with cheese (I used a cheddar blend). Then fold each as I’ve shown below. After the fourth pic below, you roll towards the unfolded edge, stuffing the filling back in as needed as you go.

Wrap each finished burrito in plastic wrap or waxed paper and store in a freezer bag. Each morning, take one out, unwrap it and microwave it from 30 – 90 seconds. It will totally depend on your microwave. Start at 30 and check often.

Easy Breakfast Burritos for the Freezer!

Once your burrito is warm you can add optional ingredients if you like. Some suggestions include:

  • hot sauce
  • bacon
  • sausage
  • ham
  • hashbrowns

Add as much as you like, but know that your freezer breakfast burritos will be delicious just the way they are!

Ingredients

  • 10 eggs, or 1 carton of egg replacement
  • 8 small flour tortillas
  • 1 cup Shredded cheddar cheese, divided

Instructions

  1. Shake the carton of Egg Creations well.
  2. Scramble in a large skillet over medium high heat.
  3. Microwave tortillas for ~15 seconds to warm.
  4. Divide eggs across tortillas. Sprinkle with cheese and roll into a burrito.
  5. Wrap with plastic wrap or wax paper and place in a freezer bag.

One of our local fast food places had, and I am sorry to have to say had, a breakfast burrito with two slices of bacon or sausage then two country potatoes (basically spiced steak fries) then scrabled eggs topped with cheese. Served with salsa. I have recreated them at home. So good everything at once. I am sure you can do this vegan.
