Finding an easy and delicious dinner idea is hard enough. Finding one that is easy, delicious, healthy and made in just one pan? That is like a dinnertime unicorn! This One Pan Light and Easy Chicken Piccata may be just the unicorn you are looking for.
First up….gather your ingredients:
- 12 ounces boneless, skinless chicken breasts
- ¼ cup all purpose flour
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- ¼ cup lemon juice
- 1/3 cup capers
- 1 (14 ounce) can artichoke hearts, packed in water, drained
- 1 (4 ounce) can mushrooms, drained
Dredge your chicken breasts in flour. Preheat the olive oil in a large skillet over medium heat. Saute the minced garlic until lightly browned.
Add your chicken to the pan and brown on both sides (2-3 minutes per side).
Add artichokes, mushrooms, capers and lemon juice to the pan and stir.
Simmer uncovered for 30-35 minutes turning the chicken while it simmers to baste in sauce. Cook until chicken breast juices run clear.
Serve and enjoy! You can also slice the breasts in half lengthways to make 4 smaller chicken portions if preferred.
