Making cute, themed dishes to celebrate holidays is awesome. I always plan to make them but I rarely actually do it. A recipe like this is a bit more my style. It’s cute but doesn’t require me to sculpt gummies in to a chicken or to make a rabbit out of fondant. In fact, this recipe only has 3 ingredients found in most any house and it is dead simple.
Step 1: Take out your supplies (I will list those for 1 egg toast…for more just multiply…easy!):
- 1 piece of bread (I prefer multigrain…yum!)
- 1 egg
- Butter
- Spring themed cookie cutter that fits easily onto the middle of the bread (you need margin of bread around the edges).
Step 2: Firmly press your cookie cutter in to the piece of bread that is on a cutting board. Hold on to the top of the cookie cuter, push down and slide back and forth to ensure that the cookie cutter cuts all the way through the bread. This will give you a piece of bread with a hole and a piece of bread in the shape of the cutter. Keep both.
Step 3: In a medium non-stick pan, melt a pat of butter. Add the bread and cook briefly before flipping it over (you want butter on both sides. Press the bread down and then crack the egg in to the hole. If the egg does not reach the edge of the hole on all sides, tilt the pan until it does.
Step 4: Cook until the top of the egg is starting to set (this will keep the egg from “splatting” and give you a better, more defined shape). Flip and cook on the other side until the egg reaches your desired level of doneness. Remove from pan and place on a plate. Add additional butter to the pan if needed and fry/toast the bread cut out. Arrange on the plate as I have above and enjoy your fun Spring-y breakfast!

I never had it until I was an adult. I must admit that I love it and using cookie cutters makes it fun too!

Eggs in a basket where a standard at our house growing up. Love the idea of using cookie cutters. Can't wait to make this for the kids!
