Easy Peasy Bean Salad

Okay, both of my cameras are D-E-A-D so no pictures. I need to start remembering to charge them b/c I really, really hate when you need to take a picture &……nope, it’s dead. Doh! Anyhoo…on to the recipe!

Easy Peasy Bean Salad
by Merry – I made it up today!

1 can mixed beans, drained and rinsed
1/2 can of niblet corn, drained and rinsed
1/4 of a medium yellow onion, chopped
2 Tbsp (or to taste) Bolthouse Farms Original Coleslaw Creamy Yogurt Dressing**
1 tomato, chopped

Mix together & eat. Many bean salads need to sit to taste good but this one is pretty much good to go immediately. I chopped up my tomato and added it at the last minute b/c I hate how tomatoes get all meally and gooey when you let them sit in salad dressing overnight.

**So far I love this brand of salad dressing (and no I wasn’t paid or given free product or anything). So far I’ve tried the Caesar, Honey Mustard and Coleslaw dressings. All are quite yummy and have around 50% less fat than “the leading xxxxx dressing”. It is usually found in the produce section. It is a product of the US so I figure you can find it in the US and Canada.
