The theme for the summer at our house is self reliance. I am desperately trying to teach our nine year old how to do things for himself around the house. If we are honest, some of the older people in our house could use refresher training too. We have breakfasts down pat but lunch can be a toss up. There are a few things that Evan can make but I am always looking for more ideas. Today’s experiment….the egg sandwich.
Sandwiches are the ubiquitous lunch offering but 1) they are cold 2) they require me to remember to buy lunch meat and 3) see the first two issues. So what can we do when we want something warm and I forgot to buy lunch meat at the grocery store?

OOOOH. I just happen to have some of Burnbrae Farms new Egg Creations. They come in Veggie & Feta, Mushroom & Spinach and Original. Each are made with real eggs and fresh ingredients with no artificial flavors or preservatives. Just shake, shake, shake and pour.
I love a great English Muffin and Egg sandwich but usually for breakfast. I also usually make them with a fried egg. Trying to make this as easy as possible, I decided to try making these in the microwave. I pulled out my Tupperware breakfast maker and poured the Mushroom & Spinach in one egg cup and the Veggie & Feta in the other. In two minutest they both were done.
I popped two English Muffins into the toaster and assembled my toppings. Since Mushroom & Spinach is one of my favorite flavor combos already, I decided to keep it simple. Toasted English muffin, buttered, eggs and a slice of Havarti. Heaven.
Greek Inspired Egg Creations Sandwich!
Next up, the Veggie & Feta eggs. Whenever I hear feta, I think of Greek food. I decide to make a Greek inspired sandwich. See my recipe below. It was AMAZING.
Greek Inspired English Muffin Egg Sandwich

Ingredients
- 1 English muffn
- 1/3 cup Veggie and Feta Burnbrae Farms Egg Creations
- 1/2 baby cucumber, sliced
- 3 grape tomatoes, sliced
- 1 Tbs tzatziki sauce
Instructions
- Toast English Muffin.
- Cook eggs in a small bowl (or egg cooker) in the microwave for 1-2 minutes (keep a close eye so it doesn't burn).
- Place egg on English muffin and top with sliced cucumber, sliced tomato and tzatziki.
- Enjoy!

Now we have a whole new lunch time favorite that is infinitely customizable. Plus it is full of protein without the preservatives and nitrates that you get in lunch meat. All you have to do is shake and pour. Easy, healthy and delicious and perfect for when you are in a hurry. Real eggs….real quick!
