Chocolate cupcakes with buttercream icing, marshmallows, and peppermint candy all add up to the delicious taste of hot chocolate in cupcake form. Kids and kids at heart are going to love these yummy treats.
Hot Chocolate Cupcakes Recipe
Ingredients:
For the cupcakes:
- 1 1/3 cup all-purpose flour
- 1/3 cup hot cocoa mix
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1/4 cup cocoa powder
- pinch of salt
- 1 1/2 cup granulated sugar
- 2 large eggs
- 2 tbsp canola oil
- 1 cup milk
For the buttercream:
- 1 stick butter, softened
- 2 cups confectioners’ sugar
- 1-2 tbsp milk
For the garnishing:
- Mini marshmallows
- Peppermint candies
- Paper straws, cut into 12-16 small pieces (about 2 inches in length)
Yields: 12 to 16 cupcakes
Instructions:
Preheat oven to 350 degrees F.
Line a muffin tin with paper cupcake holders and set aside.
In a small bowl, sift together flour, cocoa mix, baking soda & powder and salt.
In a separate bowl, whisk together sugar and eggs until creamy.
Add oil into creamed eggs and mix.
Slowly add dry ingredients into wet ingredients and mix.
Add milk and mix until cupcake batter forms.
Scoop cupcake batter into lined muffin tin, filling each lined section about 2/3 of the way.
Bake for 20 to 25 minutes. Allow to cool before decorating.
Beat all ingredients of buttercream in a medium bowl using an electric mixer. Start on low speed and gradually increase to high.
Scoop buttercream into a piping bag with an icing tip attached.
Frost each cupcake.
Garnish each cupcake with 2-3 mini marshmallows, one peppermint candy and insert a straw on the side. Serve and enjoy!
