Ingredients:
- 2 pounds chicken breast
- 1 cup water
- salt and pepper as desired
Add the water to the inner pot.
Season the chicken breasts with salt and pepper, and place in the bottom of the inner pot.
Close the lid, and be sure that the toggle switch on the top is in the “SEAL” position.
Press “Poultry”, and a time of 15 minutes will appear on the LED screen. Using the “+” button, add another 5 minutes to bring it to 20 minutes. Within a few seconds, the LED screen will switch to “ON”
The pot will begin to come up to pressure. The metal pin on the top of the lid will come up into position, indicating that pressure is building. When the pot is up to pressure, it will begin to count down from 20 minutes.
When the time is up, the screen will switch to L000. At this point, move the toggle switch on the top to start a quick release of the steam. Let the machine completely finish releasing the steam and do not open the lid until the metal pin on the top falls back into its original position.
It is now safe to open the lid and remove the chicken breasts.
Transfer them to a plate, and with 2 forks, begin to pull apart the fibers of the chicken in order to create the shredded chicken. Use immediately, or portion out to freeze for future dishes!
