The star ingredients to my meat pies are lean ground sirloin, cabbage and potatoes. Safe to say, they are the ultimate in comfort food – and incredibly filling! Plus, I make them so that they are served as “hand pies.” They’re tons of fun to eat (and also, easy to transport!).
Why Do You Call Them “Irish” Meat Pies?
My meat pies are inspired by the traditional Irish dish served during the observance of St. Patrick’s Day (a religious holiday). What Is Another Word For “Meat Pie?”
Never heard of a meat pie before? Don’t worry, we got you covered! Sometimes they’re also known as: pasties, sausage rolls, steak pies and Cornish pasties.
Meat pies are incredibly popular across many cultures, so there are all sorts of renditions (and names!) worldwide. Regardless of what you call them, we bet you will call them delicious!
How To Make Irish Meat Pies

Equipment
- Cast iron or heavy bottom frying pan
- Wooden spoon
- Round Cookie Cutter
- Pastry Brush
Ingredients
- 2 Tablespoon olive oil
- ¼ head green cabbage, shredded (cut very thin)
- ¼ pound red potatoes, scrubbed and diced
- ½ pound lean ground sirloin
- 1 ½ Tablespoon tomato paste
- ½ teaspoon Worcestershire sauce
- ½ teaspoon thyme
- Ready-made pie crust refrigerated or frozen (thawed)
- Salt and pepper, to taste
- 1 whole egg
- ½ cup + 1 Tablespoon water, divided
Instructions
In a heated cast-iron skillet, coated with olive oil, add diced potatoes and shredded cabbage. Sautee for 5-7 minutes until it begins to turn brown.
Remove from the pan and add ground sirloin into the pan.
Cook the sirloin all the way through. Next, add tomato paste, Worcestershire sauce, potatoes, cabbage, thyme, salt and pepper.
Cook all the ingredients for another 3-4 mins. Add in 1⁄2 cup of water and bring to a boil.
Cover and reduce the heat to low, allowing to cook for 10 mins. This ensures that the potatoes have time to become soft. Stir every couple of minutes to prevent from burning.
Once the meat mixture is done, allow to cool.
Cut the crust into small circles (about 3-5 inches in diameter). The larger the circle, the bigger the pie will be when folded. If cutting the crust into smaller circles, sandwich the meat mixture by enclosing another pie crust on top.
Be sure to cut 3 slits in the top of the crust. This will allow for ventilation as the pies bake.
Whisk together 1 egg and 1 tbsp water to make an egg wash. Using a cooking brush to coat the top of the pies with egg wash.
Bake in a pre-heated 400 degree oven for 12 to 15 minutes or until golden brown.
Notes
As an alternate crust, you may also use rolled-out biscuits. An egg wash is not necessary if using the biscuit option.
