What Ingredients Do I Need to Make Loaded Potato Bites?

To make these Loaded Potato Bites, all you’ll need are the following ingredients:

  • Russet potatoes
  • Olive oil
  • Ranch seasoning
  • Black pepper
  • Bacon
  • Mozzarella cheese
  • 4-cheese Mexican or Italian blend
  • Sour cream

How to Make Loaded Potato Bites

Okay, that’s enough chit-chatting from me! Here’s the recipe you’ve been waiting for! Keep on reading to follow my easy instructions so that you can make your very own Loaded Potato Bites:

Equipment

Ingredients

  • 2-3 large Russet Potatoes
  • 1/4 cup olive oil
  • 1/2 packet Ranch seasoning
  • 1-2 tsp black pepper
  • 6 slices bacon
  • 1 cup mozzarella cheese
  • 1 cup 4-cheese Mexican or Italian blend
  • 1/3 cup sour cream
  • Paprika for garnishing, optional

Instructions

Begin by preheating the oven to 350 degrees F.

Next, slice each potato to 1/2 inch thickness. Add to a foil lined sheet pan in a single layer.

Brush the potato slices with olive oil, then sprinkle on ranch seasoning and black pepper.

Flip over each potato, and brush with olive oil. Sprinkle with ranch seasoning and black pepper.

Bake the potatoes for 20 mins.

As the potatoes bake, fry the bacon in a frying pan. Drain on paper towels and cool. Once cool, crumble the bacon and set aside.

After 20 mins, turn the oven up to 375 degrees F and flip each potato slice over. Bake for an additional 15 mins

Remove the potatoes from the oven and turn the oven up to 425 degrees F.

Top each potato slice with cheese and crumbled bacon. Return to the oven for 5 mins or until the cheese is melted.

Serve hot/warm with sour cream.

Sour Cream Dip options

Add 1 tsp of smoked paprika to 1/3 cup sour cream for an extra kick.

Add 1 tbsp of ranch seasoning to 1/3 cup sour cream for a tangy dip.
