Easter is right around the corner! Everyone loves Easter eggs and the Easter bunny but my favorite part of Easter is Mini Eggs! Whether they’re Cadbury Mini Eggs or Eggies, I can eat them by the bucket. I don’t know why they taste so different than the usual coated chocolate candies but they do. I know it is a struggle not to just pour the bag down your throat but you must keep enough aside to whip up a batch of Mini Eggs Brownies.

Mini Eggs Brownies Recipe

Ingredients
- ½ cup butter
- 1 cup granulated sugar
- 2 eggs
- 1/3 cup cocoa powder
- ½ cup all-purpose flour
- Pinch of salt
- ¼ teaspoon baking powder
- 200 g candy eggs
Instructions
Preheat your oven to 350 degrees F. Line an 8×8 square pan with parchment paper and set aside.

Melt butter in a medium-sized sauce pan. Once completely melted, remove from heat.

Add sugar and eggs, mixing thoroughly and quickly so that eggs do not cook in the hot butter.

Add cocoa powder, flour, salt and baking powder. Mix until a thick, smooth batter forms.

Fold in candy eggs.
Pour batter into lined baking pan. Bake for 25 to 30 minutes or until a toothpick comes out clean when inserted into the center of the brownies.

Cut into 9 squares. Serve and enjoy!
