Morning Glory Muffins

This is a muffin recipe that Nana makes quite often. I finally remembered to ask her for the recipe. These muffins are full of goodness & make a great breakfast or snack. They also freeze well so you can make a batch, freeze & then have great muffins any time (microwave for about 30 seconds).

Morning Glory Muffins

3/4 cup all purpose flour
3/4 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp allspice
3/4 cup brown sugar
1 egg
1/2 cup buttermilk or plain yogurt
1/4 cup oil
1/2 tsp vanilla
14 oz can crushed pineapple, drained
3/4 cup grated carrots
1/2 cup raisins (I used golden)

Preheat oven to 400°F. Stir flour with baking powder, soda, salt, spices & sugar in a large mixing bowl. Whisk egg in a medium bowl with buttermilk, oil and vanilla. Stir in pineapple. Pour into flour mixture & stir until just combined. Stir in carrots and rasins. Spoon batter into muffin pan (either sprayed or wit muffin papers). Bake 15 to 17 minutes. Makes 1 dozen.

Recipe Notes: This is a slight modification of Nana’s recipe as I used whole wheat flour & white flour instead of just white. Next time I make these, I will try adding flax sead meal to add a bit more fiber & some omega 3s. When you fill the muffin cups, it will look like you can get more than 12. Go ahead and fill the muffin cups fuller to just make 12. They don’t rise all that much so they will make 12 nice sized (but not huge) muffins. Dewey and I both gives these a huge thumbs up. So much so that Dewey called me this morning to tell me how awesome the muffin I sent him to work with tasted. Yea!
