Muffin and Cookie Recipes for Back to School

 

It seems like yesterday that I took this picture of Evan at the end of the school year. The summer has flown by and now we are less than 3 days away from the start of Grade 2. We are trying to shove every moment of summer in to the last few days but it has occurred to me that I have to start planning for that most dreaded of back to school chores….

Packing Evan’s lunch.

Yep. I hate it. He is SO PICKY when it comes to his lunch and everything is either too hot or too cold or too squishy or just plain icky. He ends up eating pita chips and hummus most of the year. True story.

While I can’t find many things he’ll eat for his “main dish”, it is easy to figure out what else to pack. A few cut up veggies and a homemade treat and he is happy. Here are some of his favorite muffin and cookie recipes for back to school.

Our Favorite Muffin Recipes –

Make muffins in a big batch and freeze. Defrost in the microwave for a super quick and easy lunch treat or snack.
