I like to take something to work for breakfast every morning. Muffins & quick breads work well b/c I can freeze them & they are ready to go in the mornings. Unfortunately some recipes can pack a real punch when it comes to fat & calories. Today I set out to find a somewhat healthier muffin recipe. Here’s what I found:
Oatmeal Blueberry Muffins
Adapted from Recipe #321337 on Recipezaar
1 cup old-fashioned oatmeal
1 cup skim milk
1 cup whole wheat flour
1/2 cup Splenda granular
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup unsweetened applesauce
2 eggs (the original recipe called for egg whites only but I couldn’t be bothered)
1 cup blueberries (fresh or frozen)
Preheat oven to 400°F. Soak oats in milk for 10 to 15 minutes. Spray muffin pan with Pam. Combine all ingredients except blueberries. Mix well. Fold in blueberries. Spoon into muffin pan. Bake 20 to 25 minutes. Makes 12 muffins.
Recipe Notes: These muffins are yummy. I used paper muffin liners & the muffins seem to have stuck to the paper (though they are not cool yet so they may release). I will tweak the recipe in the future to try to improve it but all in all, they are really good!
