Oatmeal Cookies with Chocolate Chips & Craisins

I’ve been doing a lot more baking recently because Evan likes cookies and I like to know what goes into them. These aren’t super healthy but they’re not too awful (and they’re yummy too!).

Oatmeal Cookies with Chocolate Chips & Craisins

1/2 cup butter, softened
1/4 cup applesauce
1 cup brown sugar
1/4 cup white sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
3 cups rolled oats
1/2 cup chocolate chips (I use semi-sweet)
1/2 cup Craisins

Preheat oven to 350°. Line cookie sheets with parchment paper.

Cream together butter, sugar, brown sugar and applesauce in a large bowl. Add the eggs one at a time, beating well after each addition. Stir in the vanilla.

Combine flour, salt and baking soda in another bowl. Gradually stir flour mixture into creamed mixture. Stir in oats, chocolate chips and Craisins. Drop by rounded spoonfuls on prepared cookie sheet.

Bake for 8 to 10 minutes or until golden brown.

Recipe Notes: These cookies turn out different just about every time I make them. Sometimes they are chewy, sometimes not. They are ALWAYS tasty, though. It takes MUCH longer for them to bake in my oven. Not sure if the time is wrong or it’s my oven. I would start with 8 to 10 minutes & then add time if needed.

I love, love, love this recipe, or ones like it. This looks like a lovely version! I, too, bake in large part so I know what my son is eating (and DH!)
