After two weeks of crazy schedules, I really haven’t made a lot of new recipes. Here’s one I dug out of my “not blogged about yet” coffers. I could have sworn I took a picture when I baked them but I can’t find it anywhere. Oh well!
Peanut Butter Cookies

1 1/4 cup creamy peanut butter
1 cup butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1/2 tsp vanilla extract
2 1/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
Preheat oven to 375°F.
Mix the flour, baking powder & baking soda in a small bowl.
In a large mixing bowl cream together peanut butter, butter, brown sugar and granulated sugar. Beat in the eggs and the vanilla. Add flour mixture & stir. Form the dough into balls. Place on cookie sheet. Dip fork into flour or sugar and criss cross each cookie to flatten.
Bake for 12 to 15 minutes until just lightly browned. Either allow cookies to cool for 5 minutes on the baking sheet or be REALLY careful b/c they are quite fragile.
Recipe Notes: These aren’t my favorite cookie but they grew on me. They actually improved after I put them in the freezer. Everyone loves when I pull a few out of the freezer when we need a sweet snack. I wish these had a more intense peanut butter flavor but they are pretty good.

You know I have yet to find a peanut butter cookie recipe that blows my socks off. I may have to start working on that.
