Perfectly Roasted Potatoes

The kids like to ask the question “If you had to choose only one food to have the rest of your life, what would it be?” and my answer is always potatoes.  I know, it wouldn’t be a very long or healthy life but it would be happy.  Potatoes are my favorite carb.  I’d take them over bread, pasta, rice and cake any day.  There is just so much you can do with potatoes!  While there are a lot of ways I love potatoes, my family’s favorite is my husband’s Perfectly Roasted Potatoes.  We both cook and are pretty good at it but we each have certain things we are best at.  He is best at these potatoes!

The key to these amazing roasted potatoes is 3 things.  The first is the potato you start with. Redskins are our favorite.  We love the flavor and love to leave the skins on.

The second part is the oil.  We have used olive oil and coconut oil.  Both are great but personally I love the flavor the coconut oil adds and it makes the potatoes crisp up to the most beautiful golden brown.

The third part is roasting at a high temp, 450 degrees to be exact.  If you go lower they still may brown up on the outside but they have to be cooked longer and tend to either dry out or seem soggy.

Preheat the oven to 450 degrees.

Start with 3lbs of red skin potatoes.  If your family is smaller you can of course make a smaller batch.  These do reheat nice though so we never really worry about having too many.

I mean, is there such a thing as too many potatoes?  Cut the potatoes into cubes about 1″ square and rinse.  Place the rinsed potatoes in a large mixing bowl.

Drizzle the potatoes with oil, again use olive or coconut.  You’ll want them to be well coated but not swimming in oil.  Sprinkle them with salt, pepper, minced onion, and garlic powder.  How much you use of the seasonings should be according to your taste.

Spread the potatoes out on a baking sheet and roast in the preheated oven for 30 minutes.  Stir/turn them so they cook evenly and roast for an additional 15 minutes.

Remove from the oven and serve as a side with your favorite meat and veggies.  They are crisp on the outside and tender inside and so delicious.  They go great with meatloaf!

Ingredients

  • 3 lbs Red Skin Potatoes
  • Coconut Oil
  • Salt, Pepper, Minced Onion, and Garlic Powder to Taste

Instructions

  1. Preheat the oven to 450 degrees.
  2. Cut the red skin potatoes into 1"x1" chunks, rinse and place in a large mixing bowl.
  3. Drizzle the potatoes with coconut oil.
  4. Sprinkle with salt, pepper, minced onion, and garlic powder.
  5. Roast in preheated oven for 30 minutes. Stir/turn and roast for an additional 15 minutes.
  6. Serve!
