I must admit it…I was skeptical. You see, I’m from Alabama and we eat a LOT of pulled pork. In fact, I subsist almost entirely on pulled pork when I go back home to visit. So the idea of pulled pork that’s been frozen and then….gasp….microwaved was just foreign to me. I am happy to report that I was wrong.
I made the trek to Superstore last Saturday. I was pleasantly surprised that it wasn’t as crowded as I had expected on a weekend this close to Christmas. I made out my meal plan for this week and I decided to try the Low & Slow Pulled Pork featured in the Recipe to Riches show. Tonight was the night so I pulled the box out of the freezer. You get two plastic pouches with a brick of meat surrounded in sauce in each one. You poke two holes in each packet and microwave for 2 1/2 minutes. Let sit for 1 minute longer and it’s done. Yep, freezer to bun in 3 1/2 minutes flat. Oh…and did I forget to say that it’s good? Yep. Not even a hint of microwaved meat rubberiness. The sauce was tomatoey and sweet and even Evan liked it though he really wished there was less meat (who is this kid….I swear he’s going to be a vegetarian!). Dewey and I both really liked it. I can definitely see keeping a few boxes of this in the fridge for those last minute “what the heck are we having for dinner?” weeknight suppers.
