Is there anything better than pizza night? Okay, maybe pizza and a movie night! I have to admit, though, sometimes I want a change of pace when it comes to the typical pizza offerings. This Puff Pastry Pizza is a delicious variation on the classic and it is easy peasy! Perfect for those busy evenings.

Ingredients:
A roll of frozen puff pastry, defrosted/thawed
¼ cup + 2 tbsp tomato paste
½ cup shredded white cheddar cheese
1/3 of an orange pepper
3-4 salami slices
¼ cup crumbled feta cheese
Instructions:
Line a baking sheet with parchment paper and set aside.
Preheat oven to 400 degrees F.
Roll out the puff pastry onto a lined baking sheet.
Using the back of a spoon, spread tomato paste all over the puff pastry, leaving ½ an inch around the edge (for the crust).
Sprinkle shredded cheese on the area spread with tomato paste.
Cut the orange pepper in small slices, without the seeds. Place on top of the cheese.
Using kitchen scissors, cut salami into small slices and place them on top of the pizza.
Spread feta cheese crumbles on top and bake for 15-18 minutes.
Garnish with parsley, serve and enjoy! You can even switch up the toppings based on your preferences or what you have on hand. Puff Pastry Pizza is a great recipe for using up those leftovers in the fridge.

We do homemade pizza a lot at our house but I usually make the crust from scratch. This looks amazing. I'm totally trying this on our next homemade pizza night!
