I worry a lot about what to pack in Evan’s school lunch box but that is not the only meal I run out of ideas for. Breakfast is an issue too! Options are easier in some ways but so many of Evan’s favourites have a ton of sugar. I love this yummy pumpkin pecan easy granola recipe that we can stir into yogurt for breakfast.
A little crunchy and sweet treat stirred into protein-packed Greek yogurt is a great way to start the day and it will keep him full until lunch. Not a fan of yogurt? Just pour over some milk like regular cereal. Easy peasy!
The great thing about this easy granola recipe is that it doesn’t have any refined sugars in it. Instead, it is sweetened with pumpkin, dates and maple syrup. Yummy AND healthier.

Pumpkin Pecan Easy Granola Recipe
Ingredients:
4 cups old-fashioned oats
2 cups pecans, half chopped and half whole
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup chopped dates
15 ounce can pumpkin
2/3 cup maple syrup
1 teaspoon vanilla extract
Instructions:
Preheat oven to 350 degrees F.
Combine oats, pecans, and spices in large mixing bowl.
Add in pumpkin, syrup and vanilla extract, mixing well to incorporate all ingredients.
Add in chopped dates and stir again.
Pour granola onto a non-stick baking sheet or one lined with parchment paper or a Silpat mat.
Bake for 30-40 minutes, stirring halfway through and breaking up any clumps that you don’t want to clump.
Remove from oven and cool. Store in an airtight container. Will keep for 2-3 weeks.

They are my favourite too! If there are nuts in a recipe on my site, it is usually pecans.
