Quick Poached Salmon with Dill Mustard Sauce

This is a super-yummy, super quick, low fat main dish!

Quick Poached Salmon with Dill Mustard Sauce

  • 1/2 cup plain non-fat yogurt
  • 1/4 cup Dijon mustard
  • 1 Tbsp honey
  • 1/4 cup fresh lemon juice
  • 3 Tbsp chopped fresh dill
  • 1 pound salmon
  • 1 cup white wine
  • 1/2 cup water
  • 1/4 cup chopped shallots

Mix yogurt, mustard, honey, lemon juice & dill in a small bowl. Cover and refrigerate until serving.

In a medium saucepan over medium heat, place the salmon in the white wine and water. Add additional water until the fish is just covered. Sprinkle with shallots. Cover the saucepan and cook 10 to 12 minutes, until the salmon flakes easily with a fork. Drain and serve with the yogurt sauce.

Recipe Notes: I used green onions instead of shallots. We ate this dish two days in a row because Dewey bought too much salmon. We used the same sauce both nights. It was definitely better the first night. The sauce is pretty dilly so if you aren’t a big dill fan, you may want to decrease the amount of dill you use.
