Brown Sugar Glazed Salmon

Adding more fish into our diet is something I really want to do. However, it is not something I do well currently. When I do remember to buy fish to serve, it is almost always salmon. Evan loves my brown sugar glazed salmon. In fact, his name for it is “Most Delicious Fish”. That pretty much sums up why you should try this recipe!

Ingredients

  • 1/4 cup packed light brown sugar
  • 2 Tbsp Dijon mustard
  • 2 Tbsp chopped fresh dill or 2 tsp dried dill
  • 24 oz salmon filets (4, 6 oz fillets), skinned
  • 1/2 tsp salt
  • 1/2 tsp coarsely ground black pepper

Instructions

  1. Preheat oven broiler.
  2. Spray rack of a broiler pan or a cookie sheet covered in aluminum foil with cooking spray.
  3. Whisk together brown sugar, mustard and dill in a small bowl
  4. Season salmon filets with salt and pepper on both sides.
  5. Evenly divide the glaze across the filets.
  6. Position 7 inches from the broiler and broil for approximately 6 minutes or until fish flakes easily and is just opaque in the center.

Recipe Notes: This recipe was a hit with the whole family. It is just so good. I served it with white rice and asparagus. I ended up cooking this longer than 6 minutes. I just kept an eye on how done it looked and made sure it flaked at the thickest part.

The nutrition info is just a guide. I can't guarantee accuracy so definitely run it through your own tools if you must count it accurately.

My 7 year old loves salmon so much...he used to take it in his lunchbox to school! He loves the garlic salmon, but he might go for this, too. YUM!
