Cherries are one of my favourite things. I will choose cherry anything if given the choice: cherry ice cream, cherry pie, cherry soda, bring on the cherries! These Very Merry Cherry Cookies are officially a Christmas cookie but you can enjoy them any time of year!

Very Merry Cherry Cookies Recipe
Ingredients
1 stick unsalted butter – softened
8 oz cream cheese – softened
1 cup light brown sugar – packed
1 egg
1 tsp almond extract
½ tsp vanilla extract
2 cups all-purpose flour
½ tsp salt
20 oz jar maraschino cherries – drained and patted dry
½ cup white chocolate chips
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, cream together the butter, cream cheese and brown sugar.
Add in the egg, almond extract and vanilla extract and continue to mix until well combined.
In a medium-sized bowl, mix the flour and salt together.
Slowly add the flour mixture into the wet ingredients and mix until well combined. Cover the bowl and chill for several hours.
Using a small cookie scoop, scoop 1-inch balls. Place the dough onto the cookie sheet and press a small well into the tops with your thumb.
Drain the maraschino cherries. Gently squeeze each cherry in a paper towel, to make sure it’s not wet. Place one cherry in the well of each cookie. *Note – If the cherries are still wet, there will be red stains around the top of your cookies.
Bake for about 12 minutes and cool completely on a cooling rack.
Place the white chocolate chips into a microwave safe bowl. Microwave for 20 seconds, stir and then microwave 5-7 seconds at a time until the white chocolate is melted. Pour the melted chocolate into a zipper bag, snip one the tip off of one corner. Drizzle the chocolate over each cookie. Let chocolate can set for a few minutes before serving.

These turned out terrible! I checked the recipe several times wondering what I did wrong, but I followed the instructions to a T. They came out spongy so I baked them longer and they were still spongy! Very disappointed…. Tore up the recipe and will never make again. Very disappointing.

These were a disaster. Followed recipe but inside we’re doughy . Cooked them again for another 10 minutes. Still doughy.

Yum. I may use regular cherries instead. We buy pitted frozen cherries from Costco.I think if I thaw and pat them dry it will work. (We are not maraschino cherry fans.)

Tell me how it turns out! I think they are MUCH juicier so you may end up with a bit of staining but that isn't the end of the world.
