What I love most about this recipe is that it makes good use of leftover chicken.

I love to go for any leftover rotisserie chicken that we have on-hand (it happens often in our household!).

Rotisserie chicken is especially convenient when you want to make this for a quick lunch. Simply remove the skin, shred the meat, and you're ready to go.

Sometimes, I’ll bake a couple of leftover chicken breasts that I didn’t use for a previous recipe, then shred them with a fork.

You can also use a combination of white and dark meat if that's what you prefer.
