How Do You Make Creamy Spinach Parmesan Orzo?

Start by bringing a pot of salted water to a boil and cooking 1½ cups orzo according to package directions. Drain and set aside.

While the orzo cooks, heat 2 tbsp butter and 1 tbsp extra virgin olive oil in a large skillet over medium heat. Add 1 tbsp minced garlic along with salt and pepper to taste, sautéing until fragrant.

Sprinkle in 1 tbsp all-purpose flour and stir for about a minute. Slowly whisk in ½ cup cooking cream until smooth, then add ½ cup whole milk. Continue whisking over low heat for about 5 minutes, allowing the sauce to thicken.

Add 1 cup chopped fresh spinach and cook for another 2 minutes, until wilted. Remove the pan from heat and stir in ½ cup parmesan cheese until melted and creamy.

  • 1 tbsp EVOO
  • 1 tbsp minced garlic
  • Salt and pepper to taste
  • 1 tbsp all-purpose flour
  • ½ cup cooking cream
  • ½ cup whole milk
  • 1 cup fresh spinach, chopped
  • ¾ cup parmesan cheese, divided

Instructions

    1. Bring a pot of salted water to a boil and cook 1½ cups orzo

    2. While the orzo cooks, heat 2 tbsp butter and 1 tbsp extra

    4. Stir in 1 cup chopped fresh spinach and cook for another 2 minutes, until wilted. Remove the skillet from heat and stir in ½ cup parmesan
      cheese until melted and creamy.
    5. Add the cooked orzo to the sauce and gently fold everything together until evenly coated. Serve warm and top with the remaining ¼ cup parmesan cheese, if desired.
