How to Make Banana Carrot Muffins

Begin by preheat oven to 350 degrees F, and line a muffin tin with paper liners.

In a small bowl, sift together flour, baking powder, baking soda, ground cinnamon and salt. Set aside.

In a large bowl, mix both sugars, oil, eggs and Greek yogurt.

Once the wet ingredients are thoroughly combined, add your mashed banana and stir.

Slowly add dry ingredients into the wet ingredients.

Once a muffin batter forms (it will be thick), fold in shredded carrots.

Fill each section of lined muffin tin and bake for 17 to 20 minutes, or until muffins come out golden and passes the toothpick test.

Allow to cool for 5 minutes and serve.

  • 1 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • Pinch salt
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 2 eggs
  • ¼ cup Greek yogurt (plain or vanilla)
  • 1 large banana, mashed
  • 1 cup shredded carrots (approximately 2 medium-sized carrots)
