Today, I’m showing you how to bake the most perfect batch (if I do say so myself!), of Lemon Curd Muffins. With a soft, fluffy texture thanks to Greek yogurt and a luscious homemade lemon curd center, these muffins are sure to brighten your day.

How long does homemade lemon curd last?

There are lots of sources out there that’ll say that homemade lemon curd can keep up for up to a month. Personally, I like storing it in the refrigerator for up to 2 weeks in an airtight container to keep its freshness, and no more than that.

What ingredient do I need to make Lemon Curd Muffins?

Be sure you have the following ingredients before making these muffins:

  • Lemons
  • Eggs
  • Granulated sugar
  • Butter
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Greek yogurt
  • Canola oil

How to Make Lemon Curd Muffins

Start by preparing the lemon curd. Add lemon juice, eggs, sugar and lemon zest to a sauce pan. Heat over medium while whisking constantly so that the egg doesn’t cook. Bring to a boil then lower the heat. Stir until thick, about 3-5 minutes.

Whip up these soft and fluffy Lemon Curd Muffins! Made with creamy Greek yogurt and a tangy lemon curd center, they're the perfect treat for any occasion.

Remove from heat and add butter and stir to incorporate. Allow to cool while you prepare the muffin batter.

Preheat oven to 375 degrees F and line a muffin pan with paper liners. Set aside.

In a large bowl, sift together all dry ingredients: flour, sugar, baking powder and soda, and salt.

For the Lemon Curd

  • Juice of 2 ½ lemons
  • 3 egg yolks
  • 1 whole egg
  • 2/3 cup granulated sugar
  • Zest of 2 lemons
  • 4 tbsp butter

For the muffins

  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup cup Greek yogurt
  • ½ cup canola oil
