How Healthy are Lentils For You?

When it comes to homecooked meals, I try my best to make them as nutrient dense as possible – and this lentil soup ticks off many health-conscious boxes (which makes me very proud as a mom).

Lentils are a nutritional powerhouse, packed with protein, fiber, and essential nutrients that offer numerous benefits. They support heart health, aid digestion, help regulate blood sugar levels, and promote weight management.

I love the fact that lentils are a plant-based protein – so we often prepare this soup when our vegetarian friends and relatives come over for dinner.

Do I Have to Soak Lentils for Soup?

The best part about my carrot lentil soup recipe is that the dried lentils do not require any kind of presoaking! When it comes to cooking, I want to make steps as simple as possible – so prep work is little to none!

I do, however, recommend rinsing and draining the lentils just to clean them really quick.

Does It Matter What Lentils I Use for This Lentil Soup?

There are a variety of lentils, and while it’s not a huge deal to use brown or green instead of the recommended red for this recipe, it may alter the taste or change the cooking time slightly.

Green lentils, for instance, are firmer than yellow and red, so it may take longer to cook.

Red and yellow lentils are often used for soups and curries because of their tendency to get softer / creamier during the cooking process.
