Welcome back to Merry About Town! My name is Merry, and I am the founder (and head chef!) of this blog. I’m all about whipping-up easy recipes for my family – and I hope you’ll learn a thing or two from me, culinary-wise.

My most recent recipe is an Artichoke Pesto Pasta: filled with fresh garlic, pesto, and some pasta. That’s right: that’s pretty much all it takes to make this meal. Made with simple ingredients and ready in no time, it’s perfect for weeknights, lunch prep, or anytime you want something fresh and easy.

What Ingredients Do I Need to Make Artichoke Pesto Pasta?

The best part about this dish is that it takes minimal ingredients to whip-up. Be sure to gather the following:

  • Spaghetti
  • Extra virgin olive oil
  • Garlic
  • Artichoke hearts
  • Lemon
  • Pesto

The exact measurements are in the recipe card that I included just down below.

What Kind of Artichokes Should I Use?

Canned or jarred artichoke hearts work best for convenience. Just drain and chop them before adding to the pan.

You can also use frozen artichokes: just thaw and pat them dry first.

Can I Use a Different Type of Pasta?

Yes! While spaghetti works great here, feel free to use linguine, fettuccine, or even penne. Any pasta that holds onto the sauce will work well.

Can I Add Protein to This Dish?

Absolutely. Grilled chicken, shrimp, or chickpeas all pair wonderfully with the pesto and artichokes.

What Kind of Pesto Should I Use?

Store-bought or homemade pesto work beautifully. Choose a basil-based pesto for a classic flavor.

I usually opt for store-bought because it’s easiest during weeknights. I always say, “Use what works best for YOUR family!”

How Do I Store Leftovers?

Store any leftovers in an airtight container in the fridge for up 3 to 5 days. To reheat, add into a saucepan with a splash of olive oil or water, and stir over medium heat.

Don’t Overcook the Garlic

Overcooking the garlic can cause unwanted bitterness. Sauté just until fragrant: this should only take a few minutes.
