Do You Need a Candy Thermometer for Peanut Brittle?
While not required, a candy thermometer is highly recommended for accuracy. You’ll want the sugar mixture to reach 300°F, which is the hard crack stage necessary for brittle to set properly.

Without a thermometer, look for a deep golden amber color and test by dropping a small amount into cold water: it should harden instantly and snap when broken.
How Do I Store Leftovers?
You can store your leftover brittle into an airtight container and leave on the countertop. It will keep for up to two weeks! This is why it’s great for gift-giving!
